Swedish Tea Cakes

1 cup butter or margarine
1/3 cup granulated sugar
2 tsp. water
2 tsp. vanilla
2 cups sifted all-purpose flour
1 cup chopped pecans
confectioner’s sugar
Cream butter and sugar. Add water and vanilla; mix well. Blend in flour and nuts; chill 4 hours. Shape into balls or fingers. Bake at 350 degrees on ungreased cookie sheet for about 20 minutes. Remove from pan; cool slightly. Roll in confectioner’s sugar. Yields: 3 dozen

Toffee Bars

24 graham crackers
1 cup butter
1 cup brown sugar
1 tsp. vanilla
Chopped nuts, optional
Boil butter, brown sugar and vanilla for 2 minutes. Put foil on a cookie sheet before putting graham crackers on it. Pour mixture over graham crackers and bake at 350 degrees for 2 minutes.

Pfeffernusse

3/4 cup molasses
3/4 cup honey
3/4 cup shortening
4 cups all-purpose flour
1 tsp. baking soda
1 tsp. salt
1 tsp. ground allspice
1 tsp. ground mace
1/2 tsp. pepper
1/4 tsp. anise seeds, crushed
1 egg, beaten
sifted powdered sugar
Combine molasses and honey in a medium saucepan; cook over low heat until thoroughly heated, stirring frequently. Add shortening; stir until well blended. Remove from heat and set aside to cool. Combine flour, soda, salt, allspice, mace, pepper and anise in a large mixing bowl; stir well. Add egg to cooled molasses mixture, stirring until well blended. Gradually pour into flour mixture, stirring just until dry ingredients are moistened. Allow dough to rest 15 minutes. Shape dough into 1 inch balls and place 2 inches apart on greased cookie sheets. Bake at 350 degrees for 10 minutes. Remove from cookie sheets and roll in powdered sugar. Cool on wire racks. Yields: 9 1/2 dozen.

King Size Ginger Snaps

2 cups flour
1/2 tsp. salt
1 tsp. ground cloves
1 tsp. ginger
1 tsp. cinnamon
3 tsp. baking soda
1 cup sugar
1 egg
1/4 cup molasses
Extra sugar to coat
Mix all ingredients together. Shape dough into balls. Roll in sugar. Flatten with bottom of glass. Sprinkle with colored sugar. Bake at 350 degrees for 3-10 minutes.

Oatmeal Scotchies

1 1/4 cups all-purpose flour
1 tsp. baking soda
1/2 tsp. ground cinnamon
1/2 tsp. salt
1 cup (2 sticks) butter/margarine
3/4 cup granulated sugar
3/4 cup packed brown sugar
2 eggs
1 tsp. vanilla
3 cups quick or old-fashioned Quaker oats
11 ounce package of Nestle butterscotch morsels
Preheat oven to 375 degrees. Combine flour, baking soda, cinnamon and salt in small bowl. Beat butter, granulated sugar, brown sugar, eggs and vanilla extract in large mixer bowl. Gradually beat in flour mixture. Stir in oats and morsels. Drop by rounded tablespoon onto ungreased baking sheet and bake 7-8 minutes. This recipe is on back of Nestle butterscotch morsel package. Enjoy!
